Avocado, Pomegranate, and Walnut Salad


Ingredients:


2 ripe avocados
1 pomegranate (seeds)
1/2 cup walnuts, toasted and chopped
1/4 cup feta cheese, crumbled (optional)
1 small red onion, finely chopped
2 tbsp fresh mint, finely chopped
2 tbsp fresh cilantro, finely chopped
Juice of 1 lemon
3 tbsp olive oil
Salt and pepper to taste
Instructions:
Prepare the Ingredients: Dice the avocados, remove the seeds from the pomegranate, and chop the walnuts, red onion, mint, and cilantro.

Combine the Ingredients: In a large bowl, mix together the avocado, pomegranate seeds, walnuts, feta (if using), red onion, mint, and cilantro.

Make the Dressing: In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste.

Dress the Salad: Pour the dressing over the salad and toss gently to combine.
