Dark Chocolate Mousse with Aphrodisiac 

Ingredients:

200 g dark chocolate (70% cocoa)
3 eggs (yolks and whites separated)
50 g powdered sugar
1 tsp vanilla extract
1 pinch sea salts
250 ml heavy cream (35% fat), well chilled
1 tbsp honey
1 tbsp brandy or orange liqueur (optional)
Fresh berries or fruits of your choice for serving
Instructions:
Melt the Chocolate: Break the chocolate into small pieces and melt it in a double boiler (a bowl over a saucepan of simmering water) or in the microwave on low power, stirring occasionally. Allow it to cool slightly.

Beat the Yolks: In a large bowl, beat the egg yolks with the powdered sugar until creamy and pale. Add the vanilla extract, honey, and brandy or liqueur (if using), and mix well.

Mix in the Chocolate: Add the melted chocolate to the yolk mixture and stir until well combined.

Whip the Egg Whites: In a clean bowl, beat the egg whites with a pinch of sea salt until stiff peaks form. Fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until fully incorporated.

Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined.

Serve: Divide the mousse into glasses or bowls and refrigerate for at least 2 hours to set. Before serving, garnish with fresh berries or fruits of your choice.
